中文摘要: 以 13C3-丙烯酰胺为内标,基于 HPLC-MS/MS 方法,采用多选择反应监测(MRM)模式,构建绿茶中丙烯酰胺定 量分析方法;并根据该定量分析方法对全国主要产茶区的 10 个绿茶样品进行丙烯酰胺测定,结果表明,10 个绿茶样品 中丙烯酰胺均有检出,其中江苏绿茶样品检出值相对偏高,究其原因可能为绿茶加工过程中过热处理所致。
Abstract:The quantitative analysis method of acrylamide in green tea was constructed by using 13C3 labeled acrylamide as the internal standard and MRM method based on HPLC-MS/MS method. According to the quanti- tative analysis method, ten samples of green tea from the main tea producing areas in China were determined. The results showed that the acrylamide was checked out in all green tea samples. And the detected value of Jiangsu green tea sample was relatively high, which may be caused by over heat treatment in green tea processing.
