中文摘要: 坚果中富含蛋白质和脂肪酸等功能活性物质,具有广阔的食品研发价值。根据多种坚果所具有的提高细胞活 力、改善心脑血管状态、抗氧化和增强能量的作用。本研究采用混合坚果作为原料,开发一种坚果浓浆饮品,该饮品体系 稳定,口感、气味和色泽俱佳的优点。随后,我们采用人类自愿者实验分析该饮品的运动增强功能,结果表明实验组人员 在连续服用该饮品 90 d 后,可以显著增强定量运动强度,并具有足够安全性。

Abstract:Nuts were rich in protein and fatty acids and other functional substances, that had a broad food re- search and development value. According to a variety of nuts had functions for improved cell viability, enhanced cardiovascular and cerebrovascular state, antioxidant and enhanced energy. In this study, mixed nuts were used as raw materials to develop a nut-thickened beverage, the beverage system had the advantages of stability, taste, smell and color. Subsequently, we used a human volunteer experiment to analyze the exercise-enhancing function of beverage, the results showed that the experimental group was significantly enhanced the quantitative exercise intensity by continuous used the beverage in 90 days, and the beverage had sufficient security.
