中文摘要: 利用氨基酸自动分析仪分析景迈茶的氨基酸含量,用氨基酸比值系数法对其进行营养评价;采用火焰原子吸 收分光光度法测定景迈茶的矿质元素含量,并用营养质量指数法对其进行评价,从而了解景迈茶氨基酸及矿质元素营 养价值。结果表明景迈茶中含有全部 17 种氨基酸,氨基酸总量为 12.505 %,必需氨基酸总量为 4.607 %,鲜味氨基酸和 药效氨基酸总量分别为 5.246 %和 7.969 %,氨基酸的比值系数分(SRC)为 77.27;景迈茶中 8 种矿质元素的含量由高到 低的排序是 K>Ca>Mg>Mn>Na>Fe>Zn>Cu,除 Na 外,其余矿质元素的 INQ 值均大于 1。景迈茶第一限制氨基酸是蛋氨 酸+胱氨酸,其他氨基酸含量均与模式蛋白含量相当;景迈茶中除 Na 外,其余矿质元素均可满足人体需要且还富余。

Abstract:In order to explore the nutritional value of amino acid and mineral elements in Jingmai tea, the con- tent and constituents of amino acid in Jingmai tea were analyzed by automatic amino acid analyzer, and its nu- tritional value was evaluated by amino acid ratio coefficient. The content of mineral elements was analyzed by FAAS, and its nutritional value was evaluated by index of nutritional quality. The result showed that all Jingmai tea samples included 17 amino acids; the total amount of amino acids was 12.505 %, the content of essential amino acids was 4. 607 %, the contents of taste amino acids and medicinal amino acids were 5.246 % and 7.969 % respectively, and the SRC was 77.27. The content of 8 mineral elements in Jingmai tea were K>Ca>Mg>Mn> Na>Fe>Zn>Cu, the INQ values of all mineral elements were exceeded 1, but the INQ of Na was less than 1. The first limiting amino acids in Jingmai tea were methionine and cystine, other amino acids contents were equiva- lent to the content of the model protein. The mineral elements in Jingmai tea could meet the needs of the human body and have a surplus except Na.
