中文摘要: 利用挤出改性后的黑果花楸果渣为主要原料制备膳食纤维素片,并以产品综合评分为考核指标,采用单因素 试验和正交试验对产品最佳工艺配方进行优化。结果表明,当硬脂酸镁添加量为 0.4 %,微晶纤维素添加量为 15 %,木 糖醇:柠檬酸(20 ∶ 1)混合添加量为 20 %,交联羧甲基纤维素钠添加量为 2 %,此时膳食纤维素片综合评分为 29.36 分。 表面光滑无裂缝、口感细腻、清凉可口、酸甜适中,硬度、脆碎度及崩解时限等指标检测合格,能够满足消费者的食用 要求。
Abstract:Aronia Melanocarpa marc extruded modified diet as the main raw material for preparing cellulose film, and the composite score for the product evaluation index, single factor and orthogonal experiments the op- timum product formulation optimization. The results showed that, when added in an amount of 0.4 % of magne- sium stearate, microcrystalline cellulose added in an amount of 15 %, xylitol: citric acid (20 ∶ 1)added in an amount of 20 % mixing, cross-linked sodium carboxymethyl cellulose added in an amount of 2 %,at this point the comprehensive score of dietary fiber tablets was 29.36 points. The smooth surface without cracks, delicate taste, cool and delicious, sweet and sour moderate, index detection hardness, friability and disintegration time and other qualified are able to met the food requirements of the consumer.
