中文摘要: 豆薯资源在我国南方分布广泛，其块根和种籽在食品开发方面有着重要的作用，开发潜力巨大。对豆薯资源的开发利用状况进行综合阐述，并对其开发利用提出相关建议，以期为豆薯资源的开发提供一定参考。

Abstract:Pachyrrhyizus erosus is distributed in south China widely， and its tuber and seeds will play an impor－ tant role in food development. The exploitation states and potential values of Pachyrrhyizus erosus were reviewed in this paper，as well as some advices were put forward to accelerate its development.
