中文摘要: 食品工业发展迅速,但同时食品安全事故也频频发生,因此越来越多的人开始关注食品安全。引起食品安全 问题的因素有很多,其中由微生物引起的食品腐败是主要因素。如何快速检测食品中的微生物已经成为研究热点。综 述几种目前在世界范围内比较先进的检测技术,比起传统的检测手段,更加方便快捷,灵敏度更高。

Abstract:With the rapid development of food industry, food safety accidents occur frequently. Therefore, food safety is being concerned by increasing consumers. Furthermore, there are many factors influencing the problem of food safety. Of these, food spoilage cause by microorganism may be a main factor. How to detect the microor- ganisms rapidly in food is still a hot research topic. Thus, several advanced detection technologies were summa- rized. Compared with the traditional detection methods, these methods were more convenient, faster and more sensitive.
