Abstract:This paper established the ammonia - alkali hydrolysis method，in order to solve the problem of de－ termination of fat in solid beverage. The accuracy of this method was in line with national standard， with high precision and good repeatability. This method had the advantages of using simple equipments， operating conve－ niently， and could be used in the enterprise and primary-level testing organizations.
