中文摘要: 利用白灵菇为主要原料研制运动饮料,采用单因素和正交试验法对影响运动饮料的主要因素:白灵菇汁用量、 蔗糖用量、柠檬酸用量进行优化,并对运动饮料的抗运动疲劳功能进行研究。结果表明:最佳工艺参数为白灵菇汁用量20 %、蔗糖用量 5 %、柠檬酸用量 0.14 %,在此工艺条件下,产品的感官评分值为 90.7 分。小鼠试验结果表明:小鼠经灌 胃运动饮料 30 d 后,小鼠负重游泳时间显著延长;游泳 10 min 及游泳 10 min 休息 20 min 后,小鼠灌胃剂量越大,小鼠 血乳酸值下降越大。小鼠试验说明白灵菇运动饮料具有抗运动性疲劳功能。
Abstract:The use of Pleurotus nebrodensis as the main raw material, sports drinks, single factor and orthogo- nal experiment method affect sports drinks main factors: the amount of Pleurotus nebrodensis, sugar consump- tion, to optimize the amount of citric acid, and sports drinks-fatigue resistance movement carry out research. The results showed that: the optimum parameters for male flowers tea 20 %, sucrose 5 %, citric acid 0.14 %, in this condition, the product of sensory score was 90.7 points. The test results showed that the mice: mice after intragastric sports drinks 30 d, mice swimming time was significantly extended; swimming 10 min and swim- ming 10 min rest 20 min, the mice fed the larger the dose, the greater the decline in blood lactate mice. Mice experiment shows sports drink tea has anti-fatigue function.
