中文摘要: 首先对鲐鲅鱼水解蛋白的提取和营养价值进行分析,随后以鲐鲅鱼水解蛋白制备运动饮品,并进行功能分 析。通过氨基酸种类鉴定,证明鲐鲅鱼水解蛋白具有丰富的氨基酸组成,并优于WHO/FAO推荐标准,具有丰富的营养价值。经过精心调配,鲐鲅鱼水解蛋白饮品在色、香和味3个标准上符合要求。通过问卷调查和身体指标研究的方式,发现观察组人员经过连续60 d服用鲐鲅鱼水解蛋白饮品后,各项调查和研究指标均明显优于对照组人员(P <0.05),证明鲐鲅鱼水解蛋白具有明显的促进运动后恢复功能。

Abstract:Scomber japonicus hydrolyzed protein was extractedand conducted a nutritional value analysis. Follow research,hydrolyzed protein sport drink was prepared and conducted a functional analysis. By automatic amino acid analyzer ,Scomber japonicus hydrolyzed protein was proved rich in amino acids,and had rich nutritional value that better than the WHO/FAO recommendations. By carefully formulated ,Scomber japonicus hydrolyzed protein drinks were composite demand on the color, smell and taste. On means of questionnaires and body indexes research,after taking Scomber japonicus hydrolyzed protein drink 60 days,surveys and research indicators in observation group were better than the control group (P<0.05), to prove Scomber japonicas hydrolyzed protein was capable of promoting recovery after exercise.
