中文摘要: 用胰蛋白酶对脱脂鲤鱼卵进行酶解能够得到具有钙结合活性的酶解物。最佳水解条件为:温度 49 ℃,加酶量3 000(U/g 底物),底物浓度 2 %,pH 9.0。用氢氧化钠对鱼卵进行适度的脱磷处理,当脱磷率为 30.39 %时,能显著提高鱼卵的 水解度及酶解液钙结合能力,胰蛋白酶酶解 12 h 后,水解度为 31.05 %,酶解液钙结合能力为 0.67(mmol Ca/g 蛋白)。

Abstract:The enzymolysis to defatted carps with trypsin protease could obtain enzymatic hydrolysate with cal- cium binding activity. The best hydrolysis condition was as follows: 49 ℃, enzyme dosage 3 000 (U/g sub- strate), substrate concentration 2 %, and pH 9.0. Moderate dephosphorization treatment on carp eggs(rate:30.39 %) could significantly improve the degree of hydrolysis and the Ca-binding activity of enzymatic hy- drolysate. After 12 h of hydrolysis by trypsin, the degree of hydrolysis was up to 31.05 % and the Ca-binding activity was 0.67(mmol Ca/g protein).
