中文摘要: 沙门氏菌是常见的食源性致病菌之一,有研究报道乳酸杆菌可以有效的抑制某些致病菌,然而对于能够拮抗沙门氏菌的乳酸杆菌的报道并不常见。筛选出了一株具有优良拮抗沙门氏菌能力的乳酸杆菌,并对其抑菌物质的特性进行研究;结果表明3号植物乳杆菌(L.plantarum)对沙门氏菌具有较强的抑制能力,其抑菌物质中包含了细菌素、有机酸和过氧化氢。此外,乳酸杆菌的抑菌物质也具有较强的热稳定性。

Abstract:Salmonella is one of the common foodborne pathogenic bacteria.Some studies had reported that Lactobacillus could effectively inhibit some pathogenic bacteria,however,the reports of Lactobacillus strains with antagonistic activity against Salmonella were not common.A Lactobacillus strain with good antagonistic activity against Salmonella was selected,and the characteristics of antibacterial substance was revealed.Results showed that the No.3 L.plantarum had a stronger inhibition to Salmonella.The antibacterial substances contained bacteriocins,organic acid and hydrogen peroxide.In addition,the antibacterial substances of Lactobacillus also had strong thermal stability.
