Abstract:Salmonella is one of the common foodborne pathogenic bacteria.Some studies had reported that Lactobacillus could effectively inhibit some pathogenic bacteria，however，the reports of Lactobacillus strains with antagonistic activity against Salmonella were not common.A Lactobacillus strain with good antagonistic activity against Salmonella was selected，and the characteristics of antibacterial substance was revealed.Results showed that the No.3 L.plantarum had a stronger inhibition to Salmonella.The antibacterial substances contained bacteriocins，organic acid and hydrogen peroxide.In addition，the antibacterial substances of Lactobacillus also had strong thermal stability.
