中文摘要: 选取了12种水果,采用Folin-Ciocalteu测定法分析比较各种水果果皮的多酚含量,筛选出果皮多酚含量较高的水果;运用DPPH自由基法测定果皮提取液的抗氧化活性大小,用于评价水果果皮的抗氧化能力;采用蘑菇酪氨酸酶多巴速率氧化法体外测定酪氨酸酶活性的抑制作用,初步评价水果果皮的美白效果。试验结果表明,12种水果果皮都含有多酚成分,多酚含量大小依次为:山楂皮>龙眼皮>葡萄皮>芒果皮>苹果皮>木瓜皮>柚子皮>菠萝皮>猕猴桃皮>柠檬皮>梨皮>香蕉皮;对DPPH自由基清除能力依次为:山楂皮>龙眼皮>葡萄皮>芒果皮>苹果皮>木瓜皮>柚子皮>菠萝皮>柠檬皮>猕猴桃皮>梨皮>香蕉皮;对酪氨酸酶的抑制作用依次为:山楂皮>龙眼皮>葡萄皮>芒果皮>苹果皮>木瓜皮>柚子皮>猕猴桃皮>柠檬皮>菠萝皮>香蕉皮>梨皮。
Abstract:12 kinds of fruits were selected and compared in terms of polyphenol content via Folin-Ciocalteu method;antioxidant activity of pericarps extracting solution was determined by scavenging DPPH free radical in order to evaluate antioxidant ability of pericarps;meanwhile,capacity of tyrosinase inhibition was measured for screening skin whitening agents.The results showed that all of the 12 kinds of pericarps had polyphenol ingredient,polyphenol content of pericarps in the order:hawthorn>longan>grape>mango>apple>papaya>grapefruit>pineapple>kiwifruit>lemon>pear>banana;the ability of scavenging DPPH free radical in the order:hawthorn>longan>grape>mango>apple>papaya>grapefruit>pineapple>lemon>kiwifruit>pear>banana;and the ability of inhibiting tyrosinase in the order:hawthorn> longan >grape>mango>apple> papaya>grapefruit> kiwifruit> lemon>pineapple>banana>pear.
