中文摘要: 酵素字面之意为酵之要素,曾为酶的旧称,但现在已有较大延伸。介绍酵素词源、含义、衍生发展以及我国传统的药用和食用酵素、现代酵素保健食品的现状,针对食用酵素产品的特殊性及目前普遍存在缺乏相关质量及安全卫生标准、难以监管的实际,提出必须尽快研究制定"酵素"类食品的相关标准,以科学手段监管此类产品。
Abstract:The enzyme means for elements in yeast,and fermentbutnow has been greatly extended.This paper describes that the definition of enzyme and ferment derived from etymologies,meanings,traditional Chinese medicinaland food ferments,ferment health food status.For edible ferment product specificity and the prevailing lack ofregulation ofquality and safety and health standards,and difficultto practice,itwas suggested that" ferments"food standards mustbe formulated in order to supervise such products by scientific means as soon as possible.
