中文摘要: 以新鲜鹿骨为原料,探讨鹿骨酶解的最佳工艺条件;以水解度为指标,确定以碱性蛋白酶和胰蛋白酶为试验用 酶,通过正交试验确定鹿骨双酶法酶解的最佳工艺条件。结果表明:碱性蛋白酶在 pH 9.0、温度 50 ℃的条件下水解时间 为 3 h,再在 pH 8.0、温度 37 ℃条件下,加入胰蛋白酶水解 2 h,此时的水解度为 12.72 %,分别是碱性蛋白酶和胰蛋白酶 最大水解度的 1.84 倍和 1.39 倍。

Abstract:Fresh deer bones were used as raw materials to find the optimal conditions to enzymolysis deer bone. Taking degree of hydrolysis as index,alkaline protease and trypsin were chosen as the two tool enzymes. Based on orthogonal experiment, the optimum conditions of double -enzyme hydrolysis was conducted. The results showed that the optimum conditions of enzymatic hydrolysis was alkaline protease at pH 9.0,50 ℃ for 3 hours and then trypsin at 37 ℃,pH 8.0 for another 2 hours,the hydrolysis degree could be reached 12.72 %.Compared with those of hydrolyzing with alkaline protease and trypsin alone, hydrolysis degree were 1.84 times and 1.39 times, respectively.
