Abstract:Introduce the current condition of preserved fruit industry， detail the main problems， such as the ex－ cessive food additives， bacteria and heavy metal， and the comprehensive utilization of waste， analyze the rea－ sons and solutions in preserved fruit industry， and finally propose the prospect of preserved fruit industry.
