中文摘要: 通过实测多项物化指标研究酶解化香菇柄超微粉的物化性能,包括粒度、膨胀性、持水力、持油力、亚硝酸根吸 附力、溶解度、吸湿率、堆密度等。结果显示:香菇柄超微粉平均粒度 18.5 μm;平均膨胀力为 13.33 mL/g,平均膨胀率为 776 %;平均持水力为 2.545 g/g;平均持油力为 0.189 g/g;对亚硝酸根离子的吸附量为 0.538 mg/g;溶解度(g/100 g) 为 4(25 ℃)与 3.2(100 ℃);吸湿率基本成直线上升趋势,第 5 天吸湿率达到 22.7 %;平均堆密度(g/mL)0.458。与对照(香 菇柄普通粉,粒度为 80 目,相当于 175 μm)相比,有如下差异:膨胀力高 5.23 mL/g、提高率为 64.6 %,膨胀率高 582 %、提 高率为 300 %;持水力差异不明显;持油力降低 86.5 %;亚硝酸根的吸附能力是普通粉的 8 倍;溶解度远大于普通粉,常 温(25 ℃)下前者是后者的 2.4 倍,100 ℃时可达 8 倍。

Abstract:The physical and chemical properties of ultrafine powders of Lentinus edodes handle enzyme hy- drolied were studied by measuring a number of physical and chemical indicators, including grain size, swelling, water holding capacity, oil holding capacity, nitrite adsorption capacity, solubility, hygroscopicity, bulk density, results show: mushrooms handle ultramicro powder average particle size of 18.5 μm; the aver- age expansion force 13.33 mL/g, the average expansion rate of 776 %; the average water holding capacity of 2.545 g/g; the average oil holding capacity of 0.189 g/g; adsorption amount of nitrite was 0.538 mg/g; solubility was 4(25 ℃) and 3.2(100 ℃); the moisture absorption rate of basic linear upward trend, fifth days the mois- ture absorption rate of 22.7 %; the average bulk density(g/mL) 0.458. With the control(mushrooms handle of ordinary powder, the particle size was 80 mesh, equivalent to 175 μm) compared with the following differ- ences: expansion force, high 5.23 mL/g, increase rate of 64.6 %, expansion rate high 582 %, increase rate of 300 %; the water holding capacity of the difference was not obvious; oil holding capacity decreased by 86.5 %; the adsorption of nitrite ability was 8 times that of ordinary powder; the solubility was far greater than the ordi- nary powder, at room temperature(25 ℃)under the former was 2.4 times, 100 ℃ up to 8 times.
