黑麦多酚浸提液体外清除亚硝酸盐研究

中文摘要: 为拓宽黑麦深加工,也为研究谷物子实多酚物质对亚硝酸盐的清除效应,以黑麦为材料,采用分光光度法,通过 单因素试验和正交试验优化了黑麦多酚乙醇提取液体外清除亚硝酸盐的工艺条件。结果表明,黑麦多酚提取液对亚硝 酸盐具有较强的清除作用,2.11 μg/mL 的黑麦多酚提取液 6 mL,在 60 ℃、pH5.0 的条件下,反应 30 min,对亚硝酸盐的清 除率最大,可达到 89.35 %。研究结果可为黑麦资源的加工利用提供试验数据。
Abstract:To broaden the deep processing of rye and to study the clearance effect of grain polyphenols to nitrite, single factor tests and orthogonal design was adopted to optimize the clearance technology of polyphenols ethanol extract from rye to nitrite in vitro by spectrophotometric method. The results showed that rye polyphenols extract had higher nitrite scavenging effect. The scavenging rate of rye polyphenols extract to nitrite in vitro was the highest, up to 89.35 % under the optimal conditions for the clearance. That was rye polyphenols extract dosage 6 mL, reaction temperature 60 ℃, reaction time 30 min and pH5.0 when polyphenols extract concen- tration was 2.11 μg/mL. The results can provide experimental data for rye resource processing and utilization.
