Abstract:This paper introduced several new methods in the processing and utilization of Trachinotus ovatus， based on the present situation of prolific，market unhealthy，laggard process technology and simple types of pro鄄 cess products. This work aimed to provide a reference for deep-processing and comprehensive utilization，and to improve the all-side sustainable development of seafood manufacturing.
