冰淇淋大肠菌群测定方法与现行指标值关系

中文摘要: 验证 2010 版检测方法(GB 4789.3-2010《食品安全国家标准 食品微生物学检验 大肠菌群计数》)能否适合冰淇 淋大肠菌群现行指标值(≤450 MPN/100 g)。在西安市不同超市、商店进行采样,分别采用 2003 版(GB/T 4789.3-2003《食 品卫生微生物学检验 大肠菌群测定》)和 2010 版测定方法对伊利、蒙牛、和路雪、雀巢、米琪等品牌的 54 份冰淇淋样品 进行大肠菌群测定。2010 版和 2003 版测定方法对所有冰淇淋的大肠菌群检验结果均判定为合格,并且 2010 版的检测 灵敏度较高于 2003 版。推荐使用 2010 版测定方法对冰淇淋大肠菌群进行测定,指标值换算为≤4.5 MPN/g。

Abstract:To verify whether the examination method of enumeration of coliforms of ice cream (GB 4789.3-2010) can match with current limit (≤450 MPN/100 g). 54 ice cream were collected from different supermarkets and markets in Xi'an, including Yili, Mengniu, Wall's, Nestle, MAKY, et al. The coliforms value were detected by the GB/T 4789.3-2003 and 2010 edition. Test results of Escherichia of coliforms were judged to be qualified for all ice cream using two kinds of methods and the detection sensitivity of 2010 edition was higher than 2003 edition's. The determination method of 2010 edition was recommended for the coliforms examination of ice cream. The index value could be converted to 4.5 MPN/g.
