中文摘要: 以桑叶和蛹虫草为原料,添加蜂蜜、木糖醇、柠檬酸和黄原胶调味,通过正交试验设计、感官品质评价和质量检 测,确定了该保健饮料生产工艺过程中的关键参数和产品质量标准,每升饮料中,蛹虫草子实体浸提液 50 g(蛹虫草子 实体 5 g)、桑叶浸提液 150 g(桑叶 20 g)、木糖醇 50 g、柠檬酸 0.9 g、蜂蜜 25 g 和黄原胶 2 g,饮料中虫草素和黄酮含量分 别为 0.010 mg/mL 和 8.0 mg/mL 左右。最终研制出一款风味独特、保健功能稳定、质量合格的饮料。
Abstract:Mulberry leaves and cordyceps militaris as raw materials, honey, xylitol, citric acid, and xanthan gum as flavoring agents, through orthogonal experimental design, sensory quality evaluation and quality testing, key parameters of production process and product quality standard were determined, Cordyceps militaris leach liquor 50 g(Cordyceps militaris fruiting body 5 g), Morus alba leach liquor 150 g(Morus alba 20 g), xylitol 50 g, citric acid 0.9 g, honey 25 g, xanthan gum 2 g, the contents of cordycepin and tatal flavonoids were 0.010 mg/mL and 8.0 mg/mL in the beverage. A stable performance of health, unique flavor, and qualified quality beverage was developed ultimately.
