Abstract:Bifidobacterium animalis was one of the core probiotics in the human intestinal tract. Since its first isolation in 1899，it has become one of the most widely studied and applied strains in the field of probiotics，owing to its excellent acid and bile salt resistance as well as good industrialization adaptability. This paper systematically reviewed the physiological characteristics of Bifidobacterium animalis and its probiotic mechanisms in the organism. Meanwhile，it summarized the current application status and development prospects of Bifidobacterium animalis in the food industry，health food and dietary supplement sectors，thereby providing a theoretical basis for its subsequent in-depth research and development.
