基于HS-SPME-GC-MS与电子感官技术的山楂处理鸡肉挥发性风味物质分析

中文摘要: 为探究山楂处理对鸡肉挥发性风味物质的影响,采用顶空固相微萃取-气相色谱质谱联用(headspace solidphase microextraction coupled with gas chromatography-mass spectrometry,HS-SPME-GC-MS)技术结合电子鼻和电子舌对山楂处理组和对照组鸡肉进行分析。结果表明,2组样品共鉴定出60种挥发性化合物,山楂处理显著改变了挥发性成分组成结构:醛类含量增加197.8%,酮类含量增加136.9%,醇类含量降低65.2%。基于气味活度值(odor activity value,OAV)分析筛选出6种关键香气物质(OAV>1),其中苯甲醛仅在山楂处理组中具有香气贡献(OAV为118.53),己基乙酸酯仅在对照组检出(OAV为295.38),表明山楂处理显著改变了鸡肉的香气轮廓。电子鼻和电子舌主成分分析结果均实现了2组样品的良好分离(累积方差贡献率分别为80.84%和99.37%)。正交偏最小二乘判别分析结合t检验最终筛选出35种风味差异显著的特征性挥发性成分。

Abstract:To investigate the effect of hawthorn treatment on volatile flavor compounds in chicken meat,HS-SPME-GC-MS combined with an electronic nose and an electronic tongue was employed to analyze hawthorntreated and control chicken samples. A total of60 volatile compounds were identified,and hawthorn treatment significantly altered the volatile composition:aldehyde content increased by 197.8%,ketone content increased by 136.9%,and alcohol content decreased by 65.2%. Based on odor activity value (OAV) analysis,six key aroma compounds (OAV>1) were identified,among which benzaldehyde contributed to aroma only in the hawthorn-treated group (OAV of 118.53),and hexyl acetate was detected only in the control group (OAV of 295.38),indicating that hawthorn treatment significantly altered the aroma profile. E-nose and E-tongue PCA results both achieved good separation between the two groups (cumulative variance contribution rates of 80.84% and 99.37%,respectively). Orthogonal partial least squares discriminant analysis (OPLS-DA) combined with t-test finally identified 35 significantly different characteristic volatile compounds.
