中文摘要: 该研究以番樱桃为原料,以感官评分作为关键评价指标,运用单因素试验与响应曲面设计方法,对番樱桃酸奶的制备工艺进行优化。在工艺优化基础上,进一步对所制得产品的理化指标、微生物指标、质构特性、抗氧化活性、流变特性以及香气成分等进行测定。研究结果显示,经优化确定的番樱桃酸奶最佳配方为番樱桃汁添加量6.0%、蔗糖添加量6.0%、发酵剂添加量0.4%。所得番樱桃酸奶具有番樱桃特有香味,组织状态细腻,理化及微生物指标均符合GB 19302—2010《食品安全国家标准 发酵乳》要求。适量添加番樱桃汁可以改善酸奶的质构特性并增加多种香味,番樱桃酸奶抗氧化活性强于原味酸奶,且仍为剪切稀化的流体。
Abstract:Using Eugenia uniflora L. as raw materials, the single-factor and response surface methodology were employed to optimize the processing technology of Eugenia uniflora L.yogurt, on the basis of sensory evaluation.The physicochemical,microbiological,texture characteristics,antioxidant activity,rheological properties and aroma components of the product were analyzed. The results indicated that the optimal formulation of Eugenia uniflora L.yogurt was as follows: the dosage of Eugenia uniflora L. juice was 6.0%, the dosage of sucrose was 6.0%, and the dosage of starter culture was 0.4%. Such yogurt exhibited a fragrance of Eugenia uniflora L. and a fine-textured tissue state. Its physicochemical and microbial indexes complied with the requirements of GB 19302—2010 National Food Safety Standard Fermented Milk. The appropriate addition of Eugenia uniflora L. juice could enhance the textural properties of yogurt and endow it with multiple flavors. Similar to the yogurt, the Eugenia uniflora L.yogurt revealed a shear-thinning fluid, but presented a higher antioxidant capacity in comparison to the original yogurt.
