黄精复合植物饮料的工艺优化及品质分析

中文摘要: 为解决传统植物饮料活性成分保留率低、风味单一的问题,该研究以黄精、枸杞子和桑椹为主要原料,采用单因素试验结合响应面法优化提取工艺。以多糖含量、浸出物得率及DPPH自由基清除率的综合分数为评价指标,考察料液比、提取温度、提取时间和提取次数对提取效果的影响。结果表明,最佳提取条件为提取时间40 min、提取温度80 ℃、料液比1∶10 (g/mL)、提取2次。在此基础上,通过单因素结合正交试验优化配方,确定最佳配方为复合原液添加量98.15%、黄原胶添加量0.05%、木糖醇添加量1.80%。所得产品呈紫红色澄清液体,pH值为4.66,总酸含量为0.102 7 g/L,可溶性固形物含量为3.4%,口感酸甜适口,各项理化指标及微生物指标均符合相关国家标准。
Abstract:To address the issues of low retention of active components and monotonous flavor in traditional plant-based beverages,this study utilized Polygonatum sibiricum,wolfberry (Lycium barbarum),and mulberry(Morus alba) as primary raw materials. The extraction process was optimized using single-factor experiments combined with response surface methodology (RSM). Polysaccharide content,extraction yield,and DPPH (1,1-diphenyl-2-picrylhydrazyl) radical scavenging activity were selected as evaluation indices to investigate the effects of solid-to-liquid ratio,extraction temperature,extraction time,and extraction cycles. The optimal extraction conditions were determined as follows:extraction time of 40 min,temperature of 80 ℃,solid-to-liquid ratio of 1∶10 g/mL,and two extraction cycles. Subsequently,the formulation was optimized through singlefactor tests combined with orthogonal experiments,resulting in an optimal composition of 98.15% Polygonatum compound extract,0.05% xanthan gum,and 1.80% xylitol. The final product exhibited a clear purplish-red appearance with a pH of 4.66,total acid content of 0.102 7 g/L,and soluble solid content of 3.4%. The beverage demonstrated a well-balanced sweet-sour taste and met all physicochemical and microbiological standards set by national regulations.
