中文摘要: 为探究不同酶解处理对婴幼儿米粉体外消化特性及肠道菌群调节作用的影响,该研究采用体外模拟婴幼儿肠道消化与体外发酵,系统评价轻度酶解和深度酶解米粉的消化特性,并分析其对不同月龄(6~9月龄,10~12月龄)婴幼儿肠道菌群的影响。体外消化结果表明,酶解处理显著提高了米粉的淀粉水解速率和快消化淀粉(rapidly digestible starch,RDS)含量,其中深度酶解米粉的RDS含量高达85.4%,消化动力学常数K值较对照组提升30.8%,表明其更易于被婴幼儿消化吸收。在肠道菌群调节方面,深度酶解米粉可提升6~9月龄婴幼儿肠道菌群的丰富度,降低均匀度,并特异性富集乳杆菌科;而对于10~12月龄婴幼儿,酶解处理则降低了菌群丰富度、提高均匀度,并抑制了对照组中占主导的肠杆菌科相关菌群,促进了乳杆菌目等厚壁菌门的生长。综上所述,深度酶解处理不仅可促进米粉在婴幼儿体内的消化吸收,还可依据月龄差异特异性调节肠道菌群结构。
Abstract:To investigate the effects of different enzymatic hydrolysis treatments on the in vitro digestive properties of infant rice cereals and their modulation of the gut microbiota,this study employed simulated infant gastrointestinal digestion and in vitro fermentation. The digestive characteristics of mildly and deeply hydrolyzed rice cereal were systematically evaluated,and their effects on the gut microbiota of infants at different ages (6-9 months and 10-12 months) were analyzed. In vitro digestion results showed that enzymatic hydrolysis significantly increased the starch hydrolysis rate and the content of rapidly digestible starch (RDS),with deeply hydrolyzed rice cereal reaching an RDS content of 85.4% and a digestion kinetic constant K value 30.8% higher than that of control,indicating easier digestion and absorption by infants. Regarding gut microbiota modulation,deeply hydrolyzed rice cereal increased microbial richness but reduced evenness in 6-9-month-old infants and specifically enriched Lactobacillaceae. In contrast,for infants aged 10-12 months,enzymatic hydrolysis decreased microbial richness,increased evenness,suppressed Enterobacteriaceae-dominated bacteria present in the control,and promoted the growth of Firmicutes such as Lactobacillales. In summary,deep enzymatic hydrolysis not only enhances the digestibility and absorption of rice cereal in infants but also modulates gut microbiota in an age-specific manner.
