中文摘要: 为筛选可用于接种发酵蔬菜的乳酸菌,提高蔬菜发酵食品的安全性和品质,该文利用MRS培养基,从广西壮族自治区柳州市、南宁市蔬菜发酵食品中分离乳酸菌,经产酸、生理生化、分子生物学鉴定,获得3株具有产酸能力、过氧化氢酶阴性的乳酸菌,分别鉴定为短乳杆菌(Levilactobacillus brevis)、海氏肠球菌(Enterococcus hirae)和食物魏斯氏菌(Weissella cibaria)。通过对这3株乳酸菌的抑菌性能分析发现,其均对常见食源性病原菌表现出良好的抑菌效果。分别接种这3株乳酸菌发酵芥菜,发酵过程中乳酸含量明显提高、亚硝酸盐含量明显降低,可以提高发酵产品的益生性与安全性。
Abstract:To screen lactic acid bacteria suitable for inoculating fermented vegetables and improve the safety and quality of fermented vegetable food, lactic acid bacteria were isolated from fermented vegetable foods collected from Liuzhou and Nanning, Guangxi Zhuang Autonomous Region, using MRS medium. After acid production, physiological, biochemical, and molecular biological identification, three catalase-negative strains with acid-producing capabilities were obtained and identified as Levilactobacillus brevis, Enterococcus hirae,and Weissella cibaria. The analysis of antibacterial properties showed that all three strains exhibited good inhibitory effects against common food-borne pathogens. The three strains were inoculated into mustard greens for fermentation. The lactic acid content increased significantly, while the nitrite content decreased significantly during fermentation, which improved the probiotic properties and safety of the fermented products. The identification of these three strains laid a foundation for the development and application of probiotics, provided a theoretical basis for inoculated fermentation of vegetables, and has potential application value in fermented vegetable food.
