中文摘要: 为了解辽宁地区林蛙肉及林蛙卵中钾、钠、钙、镁、磷、铁、锰、铜、锌9种矿物质元素的含量及评价其营养价值,采用微波消解法处理林蛙样品,用电感耦合等离子体发射光谱(inductively coupled plasma emission spectrometer,ICP-OES)仪进行测定,并运用营养质量指数(index of nutritional quality,INQ)法开展营养评价。结果显示,林蛙肉与林蛙卵均富含9种矿物质元素,但二者含量存在明显差异。林蛙肉中钙元素含量明显高于林蛙卵,而林蛙卵中磷、锌、铁等元素含量远超林蛙肉。此外,两种样品中9种矿物质元素的INQ大多大于1,表明林蛙肉与林蛙卵均为优质的矿物质补充来源,可为居民膳食营养提供科学参考。

Abstract:To investigate the content range of nutritional value of nine mineral elements, including potassium,sodium, calcium, magnesium, phosphorus, iron, manganese, copper, and zinc, in the meat and eggs of Rana chensinensis in Liaoning Province. The samples were digested using a microwave digestion method and analyzed by inductively coupled plasma emission spectrometer (ICP-OES). Nutritional evaluation was conducted using the index of nutritional quality (INQ) method. The results showed that both the meat and eggs were rich in the nine mineral elements, though significant differences in content were observed between them.The calcium content in the meat was significantly higher than that in the eggs, while the content of phosphorus, zinc, and iron in the eggs far exceeded that in the meat. In addition, the INQ values for most of the nine mineral elements in the two samples were greater than 1, indicating that the meat and eggs are high-quality sources of minerals. These findings provide a scientific reference for dietary nutrition.
