西北地区规模化牧场生鲜乳品质差异及β-酪蛋白含量影响因素分析

中文摘要: 该文探究山西、陕西、内蒙古、甘肃4个不同地区规模化牧场的生鲜乳营养成分及微生物指标,评估造成生鲜乳品质差异的因素,同时对生鲜乳中的β-酪蛋白含量进行测定,探究不同季节、不同泌乳期、不同基因型奶牛对其含量的影响。研究发现不同地区生鲜乳营养指标差异明显,且受季节影响较大,第四季度生鲜乳营养品质较高,蛋白含量为3.46 g/100 g、脂肪含量为3.85 g/100 g,且体细胞数、嗜冷菌数最高,这些指标主要受到气候条件及牧场管理水平的影响。此外,生鲜乳中A2 β-酪蛋白含量受不同基因型奶牛影响较大,不同泌乳期、不同季节对其含量也有一定影响。主成分分析和层次聚类分析表明4个地区生鲜乳均能被较好区分,且被聚为两类。
Abstract:This paper explored the nutritional components and microbial indicators of fresh milk from largescale pastures in four different regions, namely Shanxi, Shaanxi, Inner Mongolia, and Gansu, assessed the factors causing the quality differences of fresh milk, and determined the content of β-casein in fresh milk to investigate the effects of season, lactation period, and genotype of dairy cows on its content. The research found that the nutritional indicators of fresh milk in different regions varied significantly and were greatly influenced by the season. The nutritional quality of fresh milk in the fourth quarter was relatively high, with a protein content of 3.46 g/100 g and a fat content of 3.85 g/100 g. However, the somatic cell count and psychrophilic bacteria indicators were the highest. These indicators were mainly influenced by climatic conditions and the management level of the pasture. In addition, the content of A2 β-casein in fresh milk was significantly influenced by the genotype of dairy cows, and the lactation period and season also had certain effects on its content. Principal component analysis and hierarchical cluster analysis indicated that the fresh milk from the four regions could all be well distinguished and clustered into two categories.
