中文摘要: 为开发一种鼠李糖乳杆菌发酵黄精肉苁蓉复方口服液,以感官评分为评价指标,采用单因素法和响应面法优化发酵参数,探究黄精与肉苁蓉体积比、接菌量、发酵时间对产品口感的影响。同时以DPPH自由基清除率和ABTS+自由基清除率评估发酵口服液体外抗氧化活性。结果表明:鼠李糖乳杆菌发酵黄精肉苁蓉复方口服液的最佳发酵条件为黄精与肉苁蓉体积比21∶19、接菌量8.04×106 CFU/mL、发酵时间31 h,在该条件下,感官评分为89.1,鼠李糖乳杆菌发酵黄精肉苁蓉复方口服液的总酸含量为3.85 mL/100 mL、还原糖含量为31.84 mg/mL、多糖含量为2.97 mg/mL、黄酮含量为0.65 mg/mL、多酚含量为0.80 mg/mL。DPPH自由基清除率和ABTS+自由基清除率分别为75.0%、62.7%,表明其具有较好的抗氧化作用。
Abstract:To develop a Lactobacillus rhamnosus-fermented Polygonati Rhizoma and Cistanches Herba compound oral liquid,sensory score was used as the evaluation index. A single-factor method combined with response surface methodology was employed to optimize the fermentation parameters and to investigate the effects of the volume ratio of Polygonati Rhizoma to Cistanches Herba,inoculum size,and fermentation time on product flavor. Meanwhile,the in vitro antioxidant activity of the fermented oral liquid was assessed by DPPH and ABTS+ free radical scavenging rates. The results showed that the optimal fermentation conditions for the L.rhamnosus-fermented Polygonati Rhizoma and Cistanches Herba compound oral liquid were as follows:a volume ratio of Polygonati Rhizoma to Cistanches Herba of 21∶19,an inoculum size of 8.04×106 CFU/mL,and a fermentation time of 31 h,with a sensory score of 89.1. Under these conditions,the fermented compound oral liquid had a total acid content of 3.85 mL/100 mL,a reducing sugar content of 31.84 mg/mL,a polysaccharide content of 2.97 mg/mL,a flavonoid content of 0.65 mg/mL,and a polyphenol content of 0.80 mg/mL. The DPPH and ABTS+ free radical scavenging rates were 75.0% and 62.7%,respectively,indicating good antioxidant activity.
