中文摘要: 为研发一种新型高蛋白粉剂,该研究利用鸡蛋作为培养基,优化羊肚菌培育条件,通过喷雾干燥法制备具有一定营养价值和生物活性的羊肚菌蛋白粉,并对羊肚菌蛋白粉中基本营养成分、氨基酸、脂肪酸、矿质元素含量等指标进行检测,结果显示,羊肚菌蛋白粉中粗蛋白含量为46.8 g∕100 g,氨基酸总量45.91 g∕100 g,脂肪酸总量为20.88 g∕100 g,粗多糖含量6.62 g∕100 g,矿质元素中钠、钾、镁、铁、锌含量丰富。研究表明,以鸡蛋作为培养基,羊肚菌菌丝能快速生长和发育,制备的蛋白粉保留了羊肚菌的营养成分和生物活性作用。

Abstract:To develop a new type of high-protein powder,this study utilized eggs as the culture medium to optimize the cultivation conditions of Morchella esculenta and prepared M.esculenta protein powder with certain nutritional value and biological activity through spray drying.The basic nutritional components and the content of amino acids,fatty acids,and mineral elements of the M.esculenta protein powder were detected.The results showed that the crude protein content,total amino acid content,total fatty acid content,and crude polysaccharide content of the M.esculenta protein powder were 46.8,45.91,20.88 g∕100 g,and 6.62 g∕100 g,respectively.The content of mineral elements sodium,potassium,magnesium,iron,and zinc was rich.The research indicated that when eggs were used as the culture medium,the mycelium of M.esculenta grew and developed rapidly,and the prepared protein powder retained the nutritional components and biological activity of M.esculenta.
