中文摘要: 为探究复合生物保鲜剂对腌制泥螺贮藏品质的影响,以抑菌率为响应值,采用单因素试验与响应面法优化香芹酚、大蒜素与壳聚糖的复合配比,并比较最优复合组、单一保鲜剂组及对照组在冷藏期间的品质变化。结果表明,复合保鲜剂最优添加量为香芹酚0.03 g/kg、大蒜素0.21 g/kg、壳聚糖0.32 g/kg,此条件下冷藏7 d抑菌率达88.85%。冷藏21 d内,复合组的菌落总数、挥发性盐基氮值、硫代巴比妥酸值、过氧化氢酶活性均显著低于其余各组,肌原纤维钙离子ATP酶活性及感官评分则显著高于对照组与单一保鲜组,表明复合保鲜剂有效延缓了蛋白质降解和脂肪氧化,明显改善了腌制泥螺的贮藏品质。该复合保鲜剂可为腌制水产品的绿色保鲜与产业化加工提供理论参考。
Abstract:In order to explore the effect of compound biological preservative on the storage quality of marinated mud snail, single factor experiment and response surface methodology were used to optimize the compound ratio of carvacrol, allicin and chitosan, and the quality changes of the optimum compound group, single preservative group and control group during refrigeration were compared. Within 21 days of cold storage, colony count, volatile basic nitrogen value, thiobarbituric acid value and catalase activity of the compound group were significantly lower than those of the other groups , myofibrillar calcium ATPase activity and sensory score were significantly higher than those of control group and single preservation group, indicating that the compound preservative effectively delayed protein degradation and lipid oxidation, maintained the antioxidant capacity of the body, and significantly improved the storage quality of pickled mud snails.
