中文摘要: 以低值鲐鲅鱼作为原料,多肽含量作为评价标准,通过单因素实验和响应面实验来优化低值鲐鲅鱼酶解的工艺条件。在确立最优酶解工艺参数之后,进一步对所得酶解产物的抗氧化性能、氨基酸组成以及多肽的分子量区间加以检测,结果显示,固定料液比1:6的条件下,酶解时间4.5 h,酶解温度44 ℃,酶解加酶量4800 U/g,此条件下测得酶解液的多肽含量为16.98 mg/mL。测得酶解液中含有18种氨基酸,氨基酸总量为30.47 g/L,必需氨基酸占总氨基酸的46.00%,其中天冬氨酸、谷氨酸、亮氨酸、赖氨酸等呈味氨基酸的含量较高。此外,多肽的相对分子量主要分布在1500 Da以下,占比达87.50%。研究结果为低值鱼的高值化综合利用提供了理论参考依据。
Abstract:Using low-value mackerel as the raw material and peptide content as the evaluation criterion, single-factor experiments and response surface methodology were employed to optimize the enzymatic hydrolysis conditions for this species. After determining the optimal enzymatic hydrolysis process parameters, further analyses were conducted on the antioxidant properties, amino acid composition, and molecular weight distribution range of the resulting hydrolyzed products. The results demonstrated that under a fixed feed-to-liquid ratio of 1:6, hydrolysis time was 4.5 h, hydrolysis temperature was 44°C, and enzyme addition amount was 4800 U/g. Under these conditions, the peptide content measured in the hydrolysate was 16.98 mg/mL. The hydrolysate contained 18 types of amino acids, with a total amino acid content of 30.47 g/L. Essential amino acids accounted for 46.00% of the total, with high concentrations of flavor-enhancing amino acids such as aspartic acid, glutamic acid, leucine, and lysine. Additionally, the relative molecular weight of peptides is mainly below 1500 Da, accounting for 87.50%. The research results provide a theoretical reference for the comprehensive utilization of high-value fish at high value.
