中文摘要: 蚕蛹蛋白氨基酸组成均衡且消化率高,其水解肽表现出良好的抗氧化、降血压、降血糖、抗肿瘤及免疫调节等生物活性,可通过调控生物体内代谢、抑制关键代谢酶活性等多种途径发挥调节作用。蚕蛹蛋白在食品中应用广泛,可发挥营养强化和改善质构的作用。蚕蛹蛋白在致敏性、风味和加工稳定性等方面仍存在缺陷,限制了其在食品领域的应用。本文从营养特性、功能活性、食品应用及面临的挑战等方面对蚕蛹蛋白的研究进展进行了系统综述,为其开发与利用提供科学参考。
Abstract:Silkworm pupa protein has a balanced amino acid profile and high digestibility. Its hydrolysates exhibit excellent biological activities including antioxidant, antihypertensive, hypoglycemic, antitumor, and immunomodulatory effects, which are exerted through multiple pathways such as regulating metabolism and inhibiting key metabolic enzyme activities. Silkworm pupa protein is widely used in food products, primarily serving to enhance nutrition and improve texture. However, its allergenicity, along with defects in flavor and processing stability, limits its application in the food industry. This paper systematically reviews the research progress on silkworm pupa protein from the aspects of nutritional properties, functional activities, food applications, and existing challenges, aiming to provide a reference for its development and utilization.
