中文摘要: 微生物发酵辅助提取不仅可以利用植物本身化学成分的多样性而产生多种代谢产物,还能改变发酵食品的功能特性,具有显著的技术优势与应用潜力。因此,该研究对科学网(web of science, WOS)核心合集数据库和中国知网(China National Knowledge Infrastructure, CNKI)中收录的关于微生物发酵技术增强植物活性的英文文献(2021-2026)和中文文献(2021-2026)进行调查分析,通过文献计量学方法,运用VOSviewer 1.6.20软件,对该领域的年发文量、作者、机构、发文国家和关键词等多个方面进行了系统分析,以全面展示国内外现状和发展趋势。分析结果显示CNKI中文数据库和WOS英文数据库中分别有179篇和254篇相关文献,研究的关注点主要聚焦在发酵工艺的优化、活性成分含量的测定、活性增强机制的探究、活性成分的分离纯化等。通过可视化分析微生物发酵增强植物提取物活性领域相关文献,有助于研究者全面了解该领域的研究状况,为未来天然产物高效提取、功能性食品开发、农副产品高值化利用研究提供有益的参考。

Abstract:Microbial fermentation-assisted extraction not only leverages the chemical diversity of plants to produce a variety of metabolites but also modifies the functional properties of fermented foods, offering significant technical advantages and application potential. Therefore, this study conducted a bibliometric analysis of English-language literature (2021–2026) from the Web of Science (WOS) Core Collection database and Chinese literature (2021–2026) from China National Knowledge Infrastructure (CNKI) on microbial fermentation technology for enhancing bioactivity of plant-derived phytochemicals. Using VOSviewer 1.6.20, the study systematically analyzed annual publication output, authors, institutions, countries, and keywords to comprehensively present the current status and development trends both domestically and internationally. The results revealed 179 relevant publications in CNKI and 254 in WOS. Research priorities primarily focused on optimization of fermentation processes, determination of active component content, exploration of bioactivity enhancement mechanisms, isolation and purification of active components. The visual analysis of literature in the field of microbial fermentation-enhanced plant-derived phytochemicals bioactivity helps researchers comprehensively understand the research landscape in this domain, providing valuable references for future studies on efficient extraction of natural products, development of functional foods, and high-value utilization of agricultural by-products.
