中文摘要: 本研究分别采用超声预处理、协同处理及后处理制备淮山淀粉-月桂酸复合物,探究不同超声处理对复合物理化特性的影响。结果表明:三种超声处理均可通过空化与剪切等物理效应破坏淀粉有序晶体,诱导直链淀粉与月桂酸形成V型疏水复合物,但其改性效果存在差异。超声预处理与后处理可提升复合物老化与凝沉性能,但会抑制淀粉高温溶解与溶胀能力;超声协同处理可持续疏松淀粉骨架,复合指数可达 76.55 %,赋予样品低吸油、高吸水、高溶解膨胀的优良特性。各超声处理均降低了复合物透明度。傅里叶变换红外光谱(FTIR) 与X - 射线衍射(XRD)分析证实,超声仅通过物理作用强化分子氢键与疏水作用,未改变非共价复合机制,其中超声协同组相对结晶度最低,为8.71%。综上,不同超声处理可定向调控复合物功能特性,可为淮山淀粉高值化加工提供理论支撑。

Abstract:In this study, Chinese yam starch-lauric acid complexes were fabricated via three ultrasonic strategies: pre-ultrasonic treatment, simultaneous ultrasonic treatment and post-ultrasonic treatment, to investigate the effects of different ultrasonic modes on the physicochemical properties of the complexes. The results revealed that all three ultrasonic treatments destroyed the ordered crystalline structure of starch through physical cavitation and shearing effects, and induced the formation of V-type hydrophobic complexes between amylose and lauric acid, with distinct modification performances observed among groups. Pre-ultrasonic and post-ultrasonic treatments improved the retrogradation and sedimentation properties of complexes, yet inhibited the dissolution and swelling capacity of starch under high temperature. Simultaneous ultrasonic treatment continuously loosened the starch skeleton, achieving a complex index of 76.55 %, and endowed samples with desirable properties including low oil absorption, high water absorption, strong dissolution and swelling capacity. All ultrasonic treatments reduced the transparency of complex pastes. FTIR and XRD characterizations verified that ultrasound merely strengthened intermolecular hydrogen bonds and hydrophobic interactions via physical approaches without altering the non-covalent complexation mechanism. The simultaneous ultrasonic group exhibited the lowest relative crystallinity of 8.71%. In conclusion, targeted regulation of functional properties of starch-lauric acid complexes can be realized by adopting different ultrasonic treatments, which provides theoretical support for the high-value processing of Chinese yam starch.
