中文摘要: 本文以青梅和糯米为主要原料,在传统米酒酿造工艺基础上添加青梅汁协同发酵,以发酵天数、青梅汁添加量、酒曲添加量、青梅汁添加时间及发酵温度为考察因素,研究各工艺参数对青梅米酒品质的影响。在单因素试验基础上,采用响应面法对青梅米酒发酵工艺进行优化,确定最佳发酵工艺条件为:发酵天数8d、青梅汁添加量25%、酒曲添加量0.25%。验证试验表明,该工艺条件下制得的青梅米酒感官评分为93.7,酒精度为13.5%vol,酒体兼具米酒醇香与青梅清香,口感醇厚协调,色泽清亮透明,符合优质青梅米酒的品质要求。采用顶空固相微萃取-气相色谱-质谱法测定青梅酒香气成分,共检出25种挥发性风味物质,主要香气组分为醇类、酯类和烷类,分别占89.30%、5.34%和3.11%,其中异戊醇、苯乙醇、2,3-丁二醇、乙酸乙酯和正戊烷为青梅米酒的主要香气成分,乙酸乙酯和正戊烷可能是青梅米酒中特有的关键香气化合物。本研究为青梅米酒研发提供技术支撑和理论依据,对青梅采后加工和经济价值提升具有重要意义。
Abstract:In this study, green plums and glutinous rice were used as the main raw materials, and green plum juice was introduced for co-fermentation on the basis of traditional rice wine brewing technology. Fermentation days, green plum juice addition, Koji amount, timing of green plum juice addition, and fermentation temperature were taken as the investigated factors, and the influence of various process factors on the quality of green plum rice wine was studied. Based on single?factor experiments, response surface methodology was employed to optimize the fermentation process. The optimal fermentation conditions were determined as follows: fermentation days of 8 d, green plum juice addition of 25%, and Koji amount of 0.25%. Validation experiments showed that under these conditions, the sensory score of the green plum rice wine was 93.7, and the alcohol content was 13.5% vol. The wine body exhibits both the mellow aroma of rice wine and the delicate fragrance of green plum, with a mellow and harmonious taste, a clear and bright color, meeting the quality requirements of high-quality green plum rice wine. Green plum wine aroma components were determined using Headspace Solid-Phase Microextraction-Gas Chromatography-Mass Spectrometry. Results showed that a total of 25 volatile flavor compounds were detected, and the main aroma components were alcohols, esters and alkanes, which were 89.30%, 5.34% and 3.11%, respectively. Isopentanol, phenylethanol, 2,3-butanediol, ethyl acetate and n-pentane were the main aroma components of green plum rice wine, and ethyl acetate and n-pentane might be the key and unique aroma compounds. This study provided technical support and theoretical basis for green plum rice wine, and showed great significance for green plums post-harvest processing and economic value enhancement.
