中文摘要: 摘 要:目的 了解辽宁地区4种干制藻类中总砷的含量及5种砷形态的含量并分析比较。方法 采用干式消解法处理4种干制藻类样品, 原子荧光法测定总砷的含量, 液相色谱-原子荧光法(liquid chromatography-atomic fluorescence spectrometry, LC-AFS)测定砷形态的含量。结果 4种干制藻类总砷含量存在差异。总砷含量排序为海带>羊栖菜>紫菜>裙带菜, 差异与物种属性、砷代谢能力及生长特性相关。4种干制藻类中砷甜菜碱为主要存在形态,含量在20.97~35.04 mg/kg 之间;二甲基砷、一甲基砷均有低水平检出。紫菜中无机砷未检出;海带、裙带菜无机砷含量较低;羊栖菜无机砷含量显著偏高,亚砷酸根含量较低,砷酸根为主要形态。结论 依据GB 2762—2022《食品安全国家标准 食品中污染物限量》中水产动物及其制品无机砷限量(0.5 mg/kg)进行评价,紫菜、海带、裙带菜无机砷含量均低于0.5 mg/kg,处于安全水平;羊栖菜无机砷含量显著偏高,主要与其对砷的强富集能力、砷形态有机转化效率低、以及生长环境与较长养殖周期导致的砷累积效应有关,应谨慎购买与食用。
Abstract:ABSTRACT: Objective To understand the total arsenic content and five arsenic forms in 4 kinds of dried algae in Liaoning Region, and analyze and compare them Methods The 4 kinds of dried algae samples were treated by dry digestion method. The content of total arsenic was determined by atomic fluorescence spectrometry, and the content of arsenic speciation was determined by liquid chromatography atomic fluorescence spectrometry (LC-AFS). Results Results the total arsenic content of 4 kinds of dried algae was different. The order of total arsenic content was Laminaria japonica>Sargassum fusiforme>Porphyra yezoensis>Undaria pinnatifida. The difference was related to species attributes, arsenic metabolism and growth characteristics. Arsenic betaine was the main form in four kinds of dry algae, and the content was between 20.97 and 35.04 mg/kg; Low levels of dimethyl arsenic and methyl arsenic were detected. Inorganic arsenic was not detected in Porphyra; The inorganic arsenic content of kelp and Undaria pinnatifida was low. The inorganic arsenic content in Sargassum fusiformes is significantly higher, with lower levels of arsenite and arsenate as the main form. Conclusion According to the inorganic arsenic limit (0.5 mg/kg) of aquatic animals and their products in GB 2762-2022 national standard for food safety, the inorganic arsenic content of Porphyra, kelp and Undaria pinnatifida was lower than 0.5 mg/kg, which was at a safe level; The content of inorganic arsenic in Sargassum fusiforme is significantly higher, which is mainly related to its strong enrichment ability of arsenic, low efficiency of organic transformation of arsenic forms, and arsenic accumulation effect caused by the growth environment and long breeding cycle. Therefore, it should be purchased and eaten with caution.
