中文摘要: 微量元素铁在人体代谢中具有重要的生理功能,缺铁易诱发健康问题。食品中营养强化补铁,成本低且有效。铁营养强化应用的主要技术难点是筛选合适的铁化合物和载体食物,保证食品感官品质和补铁效果。本文综述不同补铁剂理化功效及新型补铁制剂的制备技术,分析常见食品基质铁强化应用,剖析现有研究以及产业化落地壁垒,展望未来研究方向及重点。
Abstract:Iron is physiologically essential for human metabolism, and its deficiency is associated with a broad spectrum of health disorders. Dietary iron fortification represents a cost-effective intervention strategy. However, the application of iron fortification is confronted with critical challenges, including the selection of appropriate iron compounds and food vehicles, along with the need to maintain sensory acceptability and ensure sufficient iron bioavailability. This review summarizes the physicochemical properties and preparation techniques of novel iron-fortifying formulations. this review discusses the application of iron fortification across various food matrices, analyzes the barriers to industrial-scale translation, and outlines priority research directions for future development.
