中文摘要: 榴莲(Durio zibethinus Murr.)因其独特的风味与丰富的营养价值被誉为"热带水果之王"。然而,作为典型的呼吸跃变型水果,榴莲果实采后呼吸代谢旺盛、乙烯释放迅速,极易出现过熟软化、果皮开裂、微生物侵染及风味劣变等问题,货架期极短,严重制约其远距离贸易与产业化发展。本文系统综述了榴莲采后品质劣变的生理机制及保鲜技术的研究进展,重点分析各项技术的保鲜条件、作用机制及实际效果,并探讨未来发展趋势,旨在为榴莲采后减损增效提供理论与技术支撑。
Abstract:Durian (Durio zibethinus Murr.) is renowned as the “King of Tropical Fruits” for its unique flavor and rich nutritional value. However, as a typical respiratory climacteric fruit, durian exhibits intense post-harvest respiratory metabolism and rapid ethylene release, rendering it highly susceptible to softening, rind cracking, microbial infection, and flavor deterioration. Its extremely short shelf life severely limits its long-distance trade and industrial development. This review provides a systematic overview of research progress on the physiological mechanisms underlying post-harvest quality deterioration in durian and related preservation technologies. It focuses on analyzing the preservation conditions, mechanisms of action, and practical effectiveness of various technologies, while also discussing future trends, aiming to provide a theoretical and technical basis for reducing post-harvest losses and enhancing efficiency in the durian industry.
