基于代谢组学的不同品种伽师新梅品质分析

中文摘要: 为探明新疆伽师县主栽的3个新梅品种(新梅1号、新梅2号、新梅3号)的品质特征指标及天然产物组分差异,本研究采用超高效液相色谱-四极杆飞行时间质谱(UPLC-QTOF-MS)非靶向代谢组学技术,对11份成熟期果实进行分析。共鉴定到了281种天然产物,分别属于17种天然产物类型,其中黄酮类(63种,22.42%)、萜类(54种,19.22%)和酚酸类(30种,10.68%)为三大主要类别。正交偏最小二乘法判别分析(OPLS-DA)表明,品种间共筛选出147种差异代谢物,黄酮类占比最高(32.6%),是区分品种的核心化学标志物。不同品种风味与功能特征分明:新梅1号萜类、酚酸及氨基酸衍生物协调丰富,基于代谢组学显示其甜香浓郁,具有综合抗氧化潜力;新梅2号有机酸相对含量极高(62.13%),酸味突出,宜作天然酸味剂原料;新梅3号黄酮类(19.93%)及核苷类(47.92%)占比突出,适合开发高抗氧化功能食品。本研究为伽师新梅品种鉴定及高附加值产品原料筛选提供理论基础。
Abstract:To investigate the differences in quality characteristics and natural product compositions among the three main cultivated new plum cultivars (Xinmei 1, Xinmei 2, and Xinmei 3) in Jiashi County, Xinjiang, this study employed ultra-performance liquid chromatography coupled with quadrupole time-of-flight mass spectrometry (UPLC-QTOF-MS)-based untargeted metabolomics to analyze 11 fruit samples at the mature stage. A total of 281 natural products were identified, belonging to 17 classes, among which flavonoids (63, 22.42%), terpenoids (54, 19.22%), and phenolic acids (30, 10.68%) were the three major categories. Orthogonal Partial Least Squares Discriminant Analysis (OPLS-DA) revealed that a total of 147 differential metabolites were screened among varieties, with flavonoids accounting for the highest proportion (32.6%), indicating they are the core chemical markers for variety discrimination. The flavor and functional characteristics of the different cultivars are distinctly differentiated: Xinmei 1 exhibits a coordinated and rich profile of terpenoids, phenolic acids, and amino acid derivatives, with a pronounced sweet aroma, and possesses the best overall antioxidant quality; Xinmei 2 contained an exceptionally high relative content of organic acids (62.13%), with pronounced acidity, making it suitable as a natural acidulant raw material; Xinmei 3 features prominent proportions of flavonoids (19.93%) and nucleosides (47.92%), making it suitable for developing high antioxidant functional foods. This study provides a theoretical foundation for variety identification and selection of raw materials for high-value-added products of Jiashi Xinmei.
