中文摘要: 为拓展红花在天然食品抗氧化配料领域的应用,分别构建红花-金银花、红花-金丝皇菊两组植物提取物复配体系,探究不同配比复配物的自由基清除能力与抗氧化相互作用。制备标准化提取液,测定样品总黄酮、总酚、总多糖含量,分别设置9:1、7:3、5:5、3:7、1:9五种体积配比,采用DPPH·、ABTS?·、·OH三种体外自由基清除试验结合联合指数(CI)法,定量判定复配组分协同、加和或拮抗抗氧化效应。结果表明:金银花总黄酮含量最高(116.66 mg/g),综合抗氧化性能最优;红花总酚含量最高(25.57 mg/g),但单一体系抗氧化能力偏弱。CI结果显示,红花与金银花1:9配比时对三类自由基均存在广谱协同抗氧化效果,CI值依次为0.46 ± 0.03、0.078 ± 0.007、0.42 ± 0.043;红花与金丝皇菊仅在ABTS?·清除体系表现协同,清除DPPH·、·OH时均为拮抗。综上,红花∶金银花 = 1:9复配组合增效显著,可为复合天然食品抗氧化添加剂、花草功能配料的研发提供数据支撑。
Abstract:To broaden the application of safflower as natural food antioxidants, two extract blends (safflower-honeysuckle, safflower-golden silk chrysanthemum) were prepared to evaluate their radical scavenging ability and antioxidant interactions at five volume ratios (9:1, 7:3, 5:5, 3:7, 1:9). Contents of total flavonoids, phenols and polysaccharides were determined. DPPH·, ABTS?· and ·OH assays combined with Combination Index (CI) were used to identify synergistic, additive or antagonistic effects. Honeysuckle had the highest total flavonoids (116.66 mg/g) and overall antioxidant activity; safflower contained the most phenols (25.57 mg/g) but weak individual activity. The 1:9 safflower-honeysuckle blend showed broad synergism against all radicals (CI: 0.46 ± 0.03, 0.078 ± 0.007, 0.42 ± 0.043). Safflower-golden chrysanthemum only acted synergistically for ABTS?·, with antagonism toward DPPH· and ·OH. In short, the 1:9 safflower-honeysuckle mixture achieves prominent synergistic antioxidation, offering data for developing composite natural antioxidant additives and functional floral food ingredients.
