冀紫439全麦粉营养品质评价及体外淀粉消化性

中文摘要: 该试验选用冀紫439全麦粉为研究对象,对其营养成分、生物活性物质、抗氧化能力和淀粉消化性进行测定分析。结果表明:冀紫439全麦粉的蛋白质含量为15.31%,显著高于石磨全麦粉和中筋小麦粉(p<0.05);总膳食纤维含量为14.22%,其中不可溶性膳食纤维含量占总膳食纤维含量的91.14%;总酚、总黄酮、花色苷含量分别为3.03 mg GAE/g、2.48 mg RE/g、91.09 mg/kg,显著高于石磨全麦粉和中筋小麦粉。研究发现冀紫439全麦粉的DPPH自由基清除率和羟自由基清除率分别为61.74%和78.65%,抗氧化能力较强。从淀粉组成和淀粉消化性看,冀紫439全麦粉的直支比较高,为24.28%,快消化淀粉(rapidly digestible starch,RDS)含量为12.62%,慢消化淀粉(slowly digestible starch,SDS)含量为26.51%,抗性淀粉(resistant starch,RS)含量为70.52%;血糖生成指数(glycemic index,GI)值为50.44,显著低于石磨全麦粉和中筋小麦粉,属于低GI食品。通过相关性分析发现,GI值与总酚含量呈极显著负相关(p<0.01)。综上,冀紫439全麦粉可应用于低GI控糖食品的开发。
Abstract:The flour of the whole wheat ′Jizi 439′ was characterized in terms of the nutritional components,bioactive substances,antioxidant capacity,and starch digestibility.The results indicated that the protein content in the flour of ′Jizi 439′ was 15.31%,which was higher than that in stone-ground whole wheat flour and medium-gluten wheat flour(p<0.05).The total dietary fiber content was 14.22%,in which the insoluble dietary fiber accounted for 91.14%.The content of total phenols,total flavonoids,and anthocyanins in the flour of the whole wheat ′Jizi 439′ was 3.03 mg GAE/g,2.48 mg RE/g,and 91.09 mg/kg,respectively,significantly higher than that in stone-ground whole wheat flour and medium-gluten wheat flour.The DPPH radical scavenging rate and hydroxyl radical scavenging rate of the flour of the whole wheat ′Jizi 439′ were 61.74%and 78.65%,respectively,indicating high antioxidant capacity.In terms of starch composition and digestibility,the flour of the whole wheat ′Jizi 439′ had a high amylose-to-amylopectin ratio of 24.28%,the rapidly digestible starch(RDS)content of 12.62%,slowly digestible starch(SDS)content of 26.51%,and resistant starch(RS)content of 70.52%.The flour of the whole wheat ′Jizi 439′ had the glycemic index(GI)of 50.44,which was significantly lower than that of stone-ground whole wheat flour and medium-gluten wheat flour,being as a low-GI food.Correlation analysis revealed a negative correlation between GI value and total phenol content(p<0.01).In conclusion,the flour of the whole wheat ′Jizi 439′ held the potential for application in the development of low-GI foods aimed at blood glucose control.
