中文摘要: 为研究不同种类多糖对雅鱼鱼糜品质特性的影响,该试验以雅鱼鱼糜为研究对象,分别将魔芋葡甘聚糖(konjac glucomannan,KGM)、枸杞多糖(Lycium barbarum polysaccharide,LBP)、酵母β-葡聚糖(yeast beta glucan,YG)以1%的添加量,加入到雅鱼鱼糜中制作成混合鱼糜样品,测定不同贮藏时间下雅鱼鱼糜的食用品质、脂质氧化及蛋白氧化程度变化。结果表明:与空白组相比,添加KGM能够显著降低鱼糜的蒸煮损失(P<0.05),改善其冻融损失,有效减少贮藏期间的水分流失,增强鱼糜的乳化稳定性;添加YG可以显著提高鱼糜的硬度、弹性、咀嚼性以及胶着性(P<0.05),有效促进鱼糜凝胶三维网络结构的致密性、均匀性,同时也使鱼糜的蛋白溶解度有所上升,阻止蛋白氧化的发生;LBP的添加对鱼糜的储能模量G′与损耗模量G″有提升效果,促使鱼糜凝胶具有更好的黏弹性,改善鱼糜的凝胶品质。由此可知,3种多糖的添加对鱼糜在贮藏期间的品质均有不同程度的改善作用。
Abstract:The effects of different types of polysaccharides on the quality characteristics of the surimi from Schizothorax prenanti were studied.Konjac glucomannan(KGM),Lycium barbarum polysaccharide(LBP),yeast beta glucan(YG)were added to the surimi at 1% to prepare mixed surimi samples.The edible quality,lipid oxidation,and protein oxidation indicators of the samples stored for different time periods were measured.The results showed that compared with the blank group,the addition of KGM reduced the cooking loss(P<0.05),the thawing loss,and the water loss during storage,while enhancing the emulsification stability of surimi.The addition of YG improved the hardness,elasticity,chewiness,and adhesion of surimi(P<0.05),effectively improved the denseness and homogeneity of the three-dimensional network structure of the surimi gel,and increased the protein solubility and prevented the protein oxidation of surimi.The addition of LBP enhanced the storage modulus G′ and loss modulus G″ of surimi,which contributed to the better viscosity and elasticity,thereby improving the quality of the surimi gel.In conclusion,the addition of the three types of polysaccharides optimized the quality of surimi during storage to varying degrees.
