A型明胶和羟丙基淀粉比例及没食子酸添加对其复合薄膜特性的影响

中文摘要: 为探究蛋白质和多糖混合物微观结构对薄膜特性的影响,该文以A型明胶(gelatin,GE)/羟丙基淀粉(hydroxypropyl starch,HPS)混合物为模型体系,重点研究该混合物在GE和HPS不同质量比(6∶1、5∶2、3∶4、2∶5)和没食子酸(gallic acid,GA)添加下的相分离微观结构以及薄膜特性。结果表明,GE/HPS6∶1、GE/HPS5∶2成膜溶液微观结构为HPS-in-GE(HPS为分散相,GE为连续相),GE/HPS3∶4薄膜成膜溶液微观结构为双连续相,GE/HPS2∶5薄膜成膜溶液微观结构为GE-in-HPS(GE为分散相,HPS为连续相)。添加GA后,GE/HPS/GA6∶1、GE/HPS/GA2∶5成膜溶液微观结构为相容相。成膜溶液微观结构发生相分离,其薄膜抗拉强度显著降低。GE/HPS/GA复合薄膜微观结构进一步影响GA释放特性,微观结构HPS相作为外相,GA释放速率明显增加。添加GA后复合薄膜明显减缓苹果的褐变速度和降低苹果失重率。
Abstract:To elucidate the effect of the microstructure of protein and polysaccharide mixtures on the film properties,the mixture of type A gelatin(GE)/hydroxypropyl starch(HPS)was utilized as the model system.This study focused on the phase separation microstructure and film properties of the mixture at different GE/HPS mass ratios(6∶1,5∶2,3∶4,2∶5),as well as the effects of gallic acid(GA)addition.The results demonstrated that the microstructure of GE/HPS6∶1 and GE/HPS5∶2 solutions was HPS-in-GE(HPS forms the dispersed phase,while GE forms the continuous phase),while the microstructure of GE/HPS3∶4 solutions exhibited a bicontinuous phase.The microstructure of GE/HPS2∶5 film-forming solutions was identified as GE-in-HPS(GE forms the dispersed phase,while HPS forms the continuous phase).Following the incorporation of GA,the microstructure of GE/HPS/GA6∶1 and GE/HPS/GA2∶5 film-forming solutions transitioned to compatible phases.The microphase separation structure significantly reduced the tensile strength of the films.The microstructure of GE/HPS/GA films further influenced the release characteristics of GA,with the release rate increasing markedly when the HPS phase served as the external phase.After adding GA,the film significantly slowed down the browning rate of apples and reduced the weight loss rate of apples.
