Abstract:Aroma serves as a pivotal factor in determining the quality of tea. With advancements in molecular chemistry, molecular biology, and metabolomics, significant strides have been made in researching the aroma formation of Dianhong tea. This paper reviewed the chemical basis of aroma quality in Dianhong tea, the influencing factors of processing techniques, and detection methods, as well as current limitations in related studies. The aim is to better elucidate the entire process of aroma quality formation in Dianhong tea and to provide a theoretical foundation for the aroma formation during its processing.
