基于变异系数法的低血糖生成指数燕麦、玉米粗粮月饼的研制

中文摘要: 选用玉米面、燕麦面粉为主要原料,微粉碎处理的燕麦麸皮、炼乳、黄油等为添加辅料进行燕麦、玉米粗粮月饼的研制。以变异系数法计算得到的多指标综合评分为评价标准,通过单因素和响应面试验优化得到粗粮月饼的最佳配方为燕麦面粉 39 g、玉米面 61 g、燕麦麸皮 5 g、起酥油 15 g、炼乳 16 g、蛋黄 20 g、小苏打 2 g、牛奶 50 mL和总物料质量0.03%的阿斯巴甜。制得的粗粮月饼表面呈黄褐色,具有浓郁的烘烤谷物香味,饼形完整、表面光洁,口感松软、细腻、有弹性。体外消化实验结果显示粗粮月饼的水解指数、体外血糖指数分别为 49.17和 50.59。
Abstract:The oat-maize coarse-grain mooncake was prepared with maize flour and oat flour as the main raw materials and pulverized oat bran, condensed milk, and butter as additives. With the multi-index comprehensive score calculated via the coefficient of variation method as the evaluation standard, the formula was optimized by single factor and response surface tests. The optimum formula of the coarse grain mooncake was composed of 39 g oat flour, 61 g maize flour, 5 g oat bran, 15 g shortening, 16 g condensed milk, 20 g egg yolk,2 g baking soda, 50 mL milk, and 0.03% of aspartame by total material weight. The coarse grain mooncake prepared with this formula showed a yellow brown surface, a strong roasted grain aroma, a complete shape, a smooth surface, and a soft, delicate, and elastic taste. The results of in vitro digestion experiments showed that the hydrolysis index and expected glycemic index of the coarse grain mooncake were 49.17 and 50.59, respectively.
