中文摘要: 该研究系统评估生鲜猪肉在10、4 ℃和-1 ℃ 3种贮藏温度下的理化特性、微生物指标及氧化稳定性等品质的变化规律。结果表明,随着贮藏时间的延长,猪肉样品均出现水分流失、色泽劣变及持水性下降等品质劣变现象。其中,10 ℃贮藏条件下,微生物增殖速率加快,酶促反应活性增强,导致品质劣变迅速加剧,货架期仅4 d;4 ℃冷藏可在一定程度上减缓微生物增殖和氧化损伤,但仍难以长期保持猪肉品质的稳定性;相比之下,-1 ℃冰温贮藏显著抑制了微生物代谢及脂质、蛋白质的氧化进程,使货架期延长至16 d。综上所述,冰温贮藏在延长猪肉货架期和维持品质稳定性方面具有显著优势。
Abstract:This study systematically evaluated the quality variation patterns of fresh pork stored at three different temperatures of 10 ℃,4 ℃,and -1 ℃,focusing on physicochemical properties,microbiological indicators,and oxidative stability. The results showed that with increasing storage time,all pork samples exhibited quality deterioration,including moisture loss,color degradation,and decreased water-holding capacity. Under the 10 ℃ condition,accelerated microbial growth and enhanced enzymatic activity led to a rapid decline in quality,limiting the shelf life to only 4 days. Although storage at 4 ℃ could partially delay microbial growth and oxidative damage,it remained insufficient to maintain the long-term stability of pork quality. In contrast,-1 ℃ superchilling storage significantly inhibited microbial metabolism and slowed down lipid and protein oxidation processes,effectively extending the shelf life to 16 days. In summary,superchilling storage demonstrates significant advantages in prolonging the shelf life and maintaining the quality stability of pork.
