中文摘要: 该文以上海市售的巴西进口鸡肉为食品载体,开展沙门氏菌的分离鉴定、菌膜形成量测定、次氯酸钠抗性评估以及菌膜和毒力基因检测。结果 显示,在63份进口鸡肉中分离到16株沙门氏菌,污染率为25.4%。这些分离株均能形成菌膜,菌膜形成能力中等和较弱的菌株各占50%。在抗性测试中,次氯酸钠对分离株的最低抑菌浓度达520 mg/L,高于现行鸡肉消毒剂量。利用聚合酶链式反应(polymerase chain reaction,PCR)检测沙门氏菌基因携带情况,发现csrA、csgD、luxS和csgB等菌膜相关基因普遍存在,而且菌膜形成能力中等菌株比较弱菌株中csrB和fliC基因检出率更高。此外,mgtC、invJ、stn、pipC等十余个毒力基因检出率达100%,提示这些菌株具有致病潜力。
Abstract:In this study,chicken meat imported from Brazil and sold in Shanghai was utilized as the food matrix to isolate and identify Salmonella,quantify biofilm formation,measure sodium hypochlorite resistance,and detect biofilm-related and virulence genes. The results showed that 16 Salmonella strains were isolated from 63 imported chicken samples,with a contamination rate of 25.4%. All isolated strains were capable of forming biofilms,among which 50% exhibited moderate biofilm-forming ability,and 50% showed weak biofilm-forming ability. In the resistance tests,the minimum inhibitory concentration of sodium hypochlorite against the isolates reached 520 mg/L,which was higher than the current disinfection dosage for chicken meat. The polymerase chain reaction (PCR) method was used to detect the presence of Salmonella genes,and it was found that biofilm-related genes such as csrA,csgD,luxS,and csgB were universally present. Additionally,the detection rates of the csrB and fliC genes were higher in moderate biofilm-forming strains than in weak biofilm-forming ones. Furthermore,more than ten virulence genes,including mgtC,invJ,stn,and pipC,showed a 100% detection rate,underscoring the pathogenic potential of these strains.
