中文摘要: 魔芋葡甘聚糖(konjac glucomannan,KGM)是一种天然水溶性植物多糖,以其吸水性、保湿性和生物相容性在多个领域得到广泛应用。为增强其吸水性、机械强度和化学稳定性,已经开发了多种改性方法。然而,KGM在高温下稳定性不高,其提取和纯化过程复杂,从而限制了其更广泛的应用。该文全面概述KGM的结构和性能、亲水性基团的作用机制及其改性研究的最新进展及其在食品、生物材料及环境保护等领域的应用。此外,对未来KGM研究的前景进行展望,以期为后续研究提供有价值的思路。
Abstract:Konjac glucomannan (KGM),a natural water-soluble plant polysaccharide,was widely used in many fields because of its water absorption,moisture protection,and biocompatibility. Various modification methods had been developed to enhance the water absorption,mechanical strength,and chemical stability of KGM. However,KGM had limited stability at high temperatures and needed to be extracted by a complex process,which limited its wider application. The structure and properties of KGM,the mechanism of action of its hydrophilic groups,the latest progress in KGM modification,and the application of KGM in food,biological materials,and environmental protection were reviewed. In addition,the prospects of KGM in future research were discussed,with a view to providing valuable insights for subsequent research.
