中文摘要: 该文以南美白对虾虾仁和高品质等级白鲢鱼糜为原料制备复合鱼糜,以凝胶特性为指标筛选复合鱼糜的最佳复配比例。并在此基础上研究蛋清对复合鱼糜凝胶特性、流变特性、微观结构和胰蛋白酶活性的影响规律,挖掘蛋清对复合鱼糜凝胶性能的提升机制。结果表明,南美白对虾-高品质等级白鲢鱼糜的最佳复配比为3∶7(质量比),此时凝胶强度达到(278.64±9.27)g·cm;复合鱼糜添加蛋清后凝胶强度和持水性明显增加,当蛋清添加量为2%时,凝胶强度[(440.78±12.45)g·cm]和持水性[(88.58±1.87)%]最佳;复合鱼糜添加蛋清后储能模量(G')上升幅度增加,表明凝胶性能得到明显提升;扫描电子显微镜结果显示添加蛋清的复合鱼糜较未添加组所形成的凝胶网络结构更为致密和平整,形成的孔洞也较小;蛋清对复合鱼糜中胰蛋白酶活性抑制作用明显,蛋清添加量达8%时胰蛋白酶活性仅为(1.94±0.56)U/mg。综上,蛋清对南美白对虾-高品质等级白链鱼糜复合凝胶性能有提升作用,其中蛋清对胰蛋白酶活性的抑制起关键作用。
Abstract:The compound surimi was prepared from Penaeus vannamei and high-quality silver carp surimi,the best ratio of which was screened with gel properties as indicators. On this basis,the effects of egg white on the gel properties,rheological properties,microstructure,and trypsin activity of the compound surimi were studied,and the mechanism of egg white in improving the gel properties of the compound surimi was explored. The results showed that the best mass ratio of P. vannamei to high-quality silver carp surimi was 3∶7,under which the gel strength reached (278.64±9.27) g·cm. The gel strength and water holding capacity of the compound surimi increased significantly after the addition of egg white. When the egg white was added at 2%,the gel strength[(440.78±12.45) g·cm] and water holding capacity [(88.58±1.87)%] were the best. The increase in storage modulus(G') of the compound surimi enhanced after the addition of egg white,which indicated that the gel properties were significantly improved. The results of scanning electron microscopy showed that the compound surimi with egg white had more compact and regular gel network structure and smaller pores than that without egg white. Egg white had a significantly inhibitory effect on trypsin activity in the compound surimi. When the amount of egg white added reached 8%,the trypsin activity was only (1.94±0.56) U/mg. In conclusion,egg white improved the gel properties of compound P. vannamei-high-quality silver carp surimi,and it played a key role in inhibiting the trypsin activity.
